Chicken and dumplings is a favorite around here in the fall and winter. My grandmother loved cooking this for family and church. Nene and I did not like dumplings(I still don’t), but I do love to scoop out the dumplings and just have the soup.

 

 

Ingredients:temp-printable

1- 3lb Chicken (tenders or whole)
3- Cups Self Rising Flour
1 1/2- Cups Buttermilk
1- Egg
1- TSP Salt
1- TSP Black Pepper
1- TSP Galic Salt
1- TSP Creole Seasoning
1- Diced Onion

 

Directions:

Boil chicken in water, save the water when done. If you used a whole chicken, debone the chicken. If you used tenders, cut them into bite size pieces. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~Mix flour, egg, and buttermilk together to make the dough. Roll dough out till it is 1/4 an inch thick and cut into strips. Break the strips apart to make dumplings. Cook dumplings in the chicken water for 20 minutes or until done. Mix all the rest of the ingredients with the dumplings and enjoy!
