King Ranch Chicken Or Mexican Chicken
I grew up with this recipe at least once every two months. Which is pretty often when your mom only cooked Sunday breakfast and lunch. We always called it Mexican Chicken. When I was grown my sister was ordering King Ranch Chicken in a restaurant. When I asked what it was, she said “It’s the same as Mexican Chicken.” I said, “No freaking way! They serve Mexican Chicken in restaurants?” They do. So there you have it, our family’s Mexican Chicken and the rest of the world’s King Ranch Chicken are the same thing.
1- 3lb Chicken De-boned and Chopped
1- Dozen Soft Corn Tortillas or a bag of tortilla chips(prefer the chips)
1- Onion Chopped
1- lb Grated Chedder Cheese
1- Can Cream of Chicken Soup
1- Cream of Mushroom Soup
1- Can Rotel Tomatoes w/ Chilies
1- Cup Chicken Broth
Make a sauce of last 4 ingredients in a medium sauce pan. Tear tortillas into fourths or crush the bag of chips. In casserole dish, layer tortillas or chips, chicken, onions, cheese, and top with 1/4 of the sauce. Repeat until all ingredients are used ending with a layer of cheese. Cover and bake at 350 degrees for 30 min. Remove cover and bake for an additional 30 mins. Sprinkle the top with broken chips, if you like, we do.
