Crostini with Beef and Caper Mayonnaise
We have this amazing 83 YR old Veteran at our church who has been bringing these delicious little crostini appetizers to every potluck we have, for at least the last ten years. These are so great we hired him to make appetizers and sandwiches for our ladies retreat. Everyone is amazed when they find out that he made them.
24- 1/4 to 1/2 Thick Slices of Small French Bread
3- TBSP Olive Oil
1/2- Cup Mayonnaise
1/4- Cup Grated Parmesan Cheese
3- TBSP Chopped Fresh Chives
4- TBSP Drainned Capers
1/4- TSP Garlic Powder
1/2- lb Sliced Cooked Roast Beef
3- Tomatoes(cut into 24 thin slices)
3- Chopped Garlic Cloves
Pepper to Taste
Pre- heat oven to 350 degrees. Mix garlic cloves and olive oil. Heat in microwave for 20 seconds. Place bread slices on cookie sheet and brush with olive oil. Bake bread for 8-10 minutes until crisp. Cool bread for 5 minutes or until completely cooled. ~~~~~~~~~~~~~~~~~ Meanwhile in a small bowl, mix mayonnaise, grated cheese, 2 TBSP chives, Capers, and pepper. Spread mayonnaise over bread and top with roast beef and a tomato slice. Garnish with chives. Serve immediately or cover and refrigerate for 2 to 3 hours.
