Cheese Dip (Queso)
We love queso!! So much so that we had a potluck last Sunday morning and had three different kinds. This is the great thing about this dip it can be altered just slightly to satisfy everyone’s tastes. You can take out the meat and taco seasoning for those who prefer simple cheese dips. Skip the Rotel for those who can’t have tomatoes or use sausage for a more spicy flavor. You can jazz it up or simplify it in may ways to suit your needs. We have even put refried beans on the bottom, a dollop of sour cream, guacamole and cilantro on top and called it Mexican chefs dip.
1- Package or block of Velveeta Cheese
1- lb of Ground Meat (My boys prefer deer, but we have used; beef and beef sausage, elk sausage, pork sausage, turkey and turkey sausage)I have not tried it with chicken but now that I think about it I might.
1- Can Rotel Tomatoes
2- TBSP Missy’s Taco Seasoning or a PKG of Taco Seasoning
Cut cheese into 1/2- 1 inch thick squares. Brown meat with seasoning. Drain the meat. Place all ingredients in crock pot on high for 1 hour. Add water as needed. Serve with tortilla chips.
