Another holiday favorite here. To settle any confusion or misunderstanding; we call orange flesh sweet potatoes, yams Depending on the variety, sweet potato flesh can vary from white to orange and even purple. Around here we love yams. We live less that 15 miles from Golden, Texas. The home of the Golden Sweet Potatoes once given away on Oprah’s favorite things show. So to say we know sweet potatoes, is an understatement. I recently sold 1000 pounds of sweet potatoes in 3 day. We went got another 1000 pounds and in 2 weeks, we are down to less than 100 pounds. Yams have a bunch of great benefits I won’t go into here. If you want to you can read about them here. So this holiday season go whip you up some Yummy Yams, your family will thank you.


6 Yams, Cooked, Peeled and Quatered
1 Cup Brown Sugar
1/4 Cup Heavy Whipping Cream
3 TSP Sugar
3 TBSP Butter
1/2 TSP Salt
1/2 Cup Dark Corn Syrup
1 Cup Crushed Pecans


Mix corn syrup, butter, cream, sugar, and salt in a sauce pan and bring to a boil, stirring constantly. Boil for 5 minutes. Arrange yams in a single layer in the bottom of a baking dish. Pour boiled mixture over yams. Sprinkle crushed pecans on top. Bake at 350 for 15 minutes.
