At every church potluck i have ever been to there is some strange casserole with ingredients you normally would not put together; like broccoli and cream cheese, meatball in grape jelly, or rice krispies and chicken. Oddly enough, these combinations normally turn out fabulous. This is one of these times. Rice krispie casserole is a wonderful mix of savory food topped with the tasty snap, crackle and pop we grew up with.


3 1/2 Cups Rice Krispie Cereal
1 12 Cups Chicken Broth
1/3 Cup Bell Pepper
1/3 Cup Diced Yellow Onion
1 Can Cream of Mushroom Soup
1 Can Cream of Chicken Soup
1 Can Cream of Celery Soup
3/4 Cup Mayo
1 1/2 Cup Whole Milk
2 Cups Instant Rice
1 1/2 Sticks of Butter
3 Boneless Skinless Chicken Breast


Boil chicken and cut into bite-sized pieces. Saute onion and pepper in 1 TSP of butter. Mix all ingredients (except the rice krispies and leftover butter.) Pour mix in a greased 9 x 13 baking dish. Pour rice krispies into a large mixing bowl. Melt remaining butter and pour over rice krispies. Layer rice krispies on the top of the baking dish. Bake, uncovered at 350 for 30 to 40 minutes until golden and bubbly.
