Mexican Cheese Cake is an appetizer that is great for potlucks, parties and family get-togethers. This is a fabulous almost cheese ball type concoction that is filled with goodness and top with deliciousness. If you have Mexican food lovers, you can’t go wrong with this Mexican cheese cake. Serve it up with your favorite tortilla chips and watch the cake disappear.



1 lb cream cheese, softened

2 1/2 Cups shredded cheese

2 Cups sour cream divided

1 1/2 pkg taco seasoning

3 Eggs

1- 4oz can green chilies

2/3 Cup salsa or pico de gallo

1/3 Cup black olives

Cilantro to taste


Preheat oven to 350 degrees. Combine 2 cups of cheese and cream cheese. Beat until fluffy. Stir in one 1 cup sour cream and taco seasoning. Beat eggs, one at a time mixing well after each. Fold in chilies. Pour into 9inch spring-form pan. Bake at 350 for 35 to 40 minutes. Cool for 10 minutes. Spoon on remaining sour cream and spread evenly. Bake another 5 minutes. Cool completely.

Cover and refrigerate for several hours. Before serving remove spring form and top with salsa or pico, cheese  and black olives.
