Soup and salad lunches are common at our church. We have a few a year and soups are frequently seen at all our potlucks. Probably because you can transport them in a crock pot and keep them warm during the church service. Even with all this we still never tire of soups. Cream of Cilantro Soup is one of my favorites because I love the fresh taste of good cilantro. This soup has a soft silky texture that just seems ease into month and down your throat. It is a treat no matter the occasion. It is so good I would almost knock someone down to get the last bowl. (I said almost!)

Ingredients:proverbs-3-5-and-6

1 Bunch of Cilantro

32oz- 1 pkg Chicken Broth, Divided

2 TBSP Butter

2- TBSP Flour

8oz- 1 pkg Cream Cheese

8oz- 1 pkg Light Sour Cream

1- Garlic Clove, Minced

¼- TSP Salt

¼ TSP Ground Red Pepper

¼ TSP Cumin

 

Directions:

Remove stems and chop leaves of cilantro. Place Cilantro and 1 cup chicken broth in a blender or food processor and blend until smooth. Melt butter in a Dutch oven or soup pot, on medium heat and whisk in flour. Gradually add in the remaining 3 Cups of broth, whisking constantly, until mix is smooth. Boil for 1 minute. Stir in Cilantro mix, cream cheese, and other 5 ingredients. Simmer soup for 15 minutes. Garnish as desired. Makes 6 Cups.

I double the recipe for Stretch’s Birthday party. This recipe,  corn salad, baked beans, Tater Tot Casserole, rolls, bacon and cheese ring and the ultimate chocolate cake fed 18 people.
