CAMP CHOWDER SURPRISE
I created this recipe in an effort to get rid of food on the last day of a camping trip. It turned out to be outstanding! Thus, the name camp chowder. I added surprise to the name because it drives my husband and son crazy, wondering what the surprise was. Generally my surprises are soy or seaweed. Something healthy. This is just Surprise! It’s so tasty.
1/2 lb Smoked Sausage, diced
2 large boneless, skinless Chicken Breasthalves, cut into 1/2″ cubes
1 med Onion, chopped
4 cps Water
1 tsp Salt
1/2 tsp Paprika
2 boxes AuGratin Potatoes
1 package (1/2 box) Sour Cream and Chive Mashed Potatoes
4 cps Milk
1 can Corn, drained
In a dutch oven coated with non-stick spray, saute sausage, chicken, and onions until onions are clear. Add water, salt, and paprika. Bring to boil.
Reserving cheese packets, add AuGratin potatoes to pot, reduce heat, and simmer until potatoes are cooked, about 1/2 hour. Remove from heat.
Reserving season packet, stir in mashed potatoes until just moistened. Stir in contents of seasoning and cheese packets. Stir in milk and return to stove. Add corn and heat until chowder just begins to bubble.
This is a meal in a bowl!
