Chili is a staple around here. Our feelings on our chili is the same as our holiday dressing, everyone has there own recipe and that rest is the best. The one thing we can all agree on is; there’s no beans in chili. My grandpa used to say, “If you know beans about chili, you know chili ain’t got no beans”.


2 1/2 pounds beef chuck, cut into 2-inch cubes
2 tablespoons packed light brown sugar
Kosher salt
2 tablespoons vegetable oil
1 small onion, finely chopped
5 cloves garlic, smashed
2 4 .5-ounce cans chopped green chiles, drained
1 tablespoon ground cumin
3/4 cup chili powder
1 14 -ounce can diced tomatoes with chiles
1 to 2 tablespoons green hot sauce


Mix meat, brown sugar, and onions in a skillet and brown. You can do it in rounds if your skillet is not large enough. Put all ingredients in crockpot and cook on high 7-8 hours or on low 20 or more hours. I quite often just let it cook overnight.
