One Skillet Camp Hash
So, as many of you know, my husband and I teach a group of boys at our church that rang in age from 12 to 18. I lovingly refer to them as my boys because quite frankly i think of them as my kids. We love to take them camping; a. because they love it and b. because it gives them a chance to get away and play in the woods. When we camp, I have the title of “Cookie” because I cook every meal. So, making the meals easy with the least amount of pans to clean is top priority. well that and making it delicious so they will eat it. This is great because it can be made with pretty much any meat you have. I used ground deer once and cubed up deer steak(about 1 inch cubes) another time. However; it can be made with ham cubes, beef(roast, ground and etc.), chicken, turkey or any form of game meat. If you make this as a last meal, you can throw in any leftover bacon, cheese or veggies.
2 Tablespoons butter
1 small onion, chopped
1lb meat of choosing
1 can cream of mushroom soup(optional. We like sauce)
2 cans diced potatoes, drained
Cut up meat if needed. Melt butter in large skillet. Add meat and onions, saute until just soft. Drain grease from skillet. Add meat, soup and potatoes. Cook, stirring occasionally, till meat and potatoes start to brown. Recipe can be doubled or tripled depending on the size of the group. Its great for potlucks you can throw it in a roaster or a crock pot to keep it warm.
