Christmas is upon us and there is few if any healthy Christmas candy on the bar. What do you do? Gobble up what there and promise to workout harder after the holidays or do you glare at them from across the room and sign every time a skinny person eats one? You can do what I do, try to find healthy alternatives. This recipe is great for that. you can snack on one and not feel like you wasted everything you’ve worked for.  And BONUS! they are tasty. Here I the regular brownie bites and flax seed brownie bite.

Ingredients:asfor

1 cup walnuts(I use pecans because we have an abundance, five mature pecan trees)

1 cup Dates, pitted (about 11)

1/3 cup + 1 tablespoon unsweetened cocoa powder

1 teaspoon vanilla extract

1 tablespoon melted refined coconut oil

1/4 teaspoon sea salt

1/4 cup chocolate chips

Flax Seed and Brownie Bitesbrownie

3/4 cup walnuts or pecans

1 cup Dates, pitted (about 11)

1/3 cup + 1 tablespoon unsweetened cocoa powder

1 teaspoon vanilla extract

2 tablespoons melted refined coconut oil

1/3 cup unsweetened shredded coconut

1/4 cup chocolate chips

1/4 cup flax seeds

Directions:

Place nuts in a food processor and blend on high until finely ground. Add the remaining ingredients (except for the chocolate chips) and pulse until a uniform dough has formed.

Place dough into a medium size bowl along with chocolate chips (add coconut and flax seeds at this point if making the second option) then mix together with your hands. Take one heaping tablespoon worth of dough at a time and roll into balls. Refrigerate for at least thirty minutes before serving. (refrigeration isn’t necessary but it helps them solidify)

Store in an airtight container in the refrigerator or at room temperature for up to one week.
