This is go-to salad for our lunches and potlucks at church for yearsYou can make it ahead of time and refrigerate it until ready to eat. Plus it will keep well for several days. I suggest making a double batch of Tropical Chickpea Salad to bring to parties. This salad is super easy and It’s always a hit! It literally takes about 5 minutes to make this and that includes opening packages and measuring time.

Ingredients:

1-15 ounce can chickpeas, rinsed and drained (1 1/2 cups)
½ red onion, diced
1 mango (any variety), cubed
1 avocado, cubed
Handful of chopped cilantro
3 Tbsp. lemon juice
1 Tbsp. olive oil
1/4 tsp. ground cumin
Dash of chili powder
Salt, to taste

Directions:

Combine all the ingredients and chill until ready to serve. Enjoy!
