Baked Chicken Salad
Many pot lucks have one of these casseroles. This is a great dish that can be thrown together fairly quickly and you can use leftovers to create different versions of this dish. You can add corn or beans. Basically, this dish can take this recipe and run with it.
3 cups chopped cooked chicken
1 and 1/2 cup chopped celery slices
1 cup shredded sharp cheddar cheese
1 tablespoon chopped onion
1 tablespoon lemon juice
1 and 1/2 teaspoon salt
enough mayo to moisten
1 and 1/2 cups crushed sour cream and onion or sour cream and cheddar potato chips
Mix celery, chicken, 1/2 cup cheese, onion, lemon juice, seasonings and enough mayo to moisten it real well. Mix lightly, spoon into a 1 1/2 quart dish. Bake at 350F for 35 minutes. Top with combined remaining cheese and chips bake till cheese melts!!
