Broccoli and Cheese Soup
Oh My Gosh! In a bread bowl this soup is divine. Broccoli and Cheese Soup is a creamy good soup that is so comforting an a cool winters day. This soup is great for any occasion and it is sure to please. We use jalapeno cheese wiz. Because, well, we live in Texas and we tend to want to add a little pep (or pepper) on our step. You can use regular if the jalapeno is just too much. Personally, I love the kick. I think it adds just enough spice to make it special.
1/2 stick margarine
3 ribs celery, chopped(sometimes I skip this because I am not a huge fan of celery)
1 medium onion, chopped
3 cans cream of Mushroom Soup, undiluted
3 soup cans milk
2 packages frozen Broccoli, uncooked
1 small jar Jalapeno Cheese Whiz
In margarine, slowly saute the celery and onion. In large large saucepan, combine Mushroom soup, milk, frozen broccoli, cheese whiz and celery/onion mixture.
Heat thoroughly and slowly. Do not let boil or soup will be too thin.
If you like it more “cheesy” add 1/2 cup cheddar cheese.
