Easy Vegetable Beef Soup
We love to whip up a bunch of soups at the end of Autumn and freeze them. When we want soup we just pull one out and heat it up. This soup is always on the list on soup day. We make it with ground deer, however, you can make it with beef or even pork sausage. This is a super easy soup that is delicious.
1 1/2 pounds hamburger
2 cans Beef Broth plus 1 can water
5 beef Bouillon cubes
2 potatoes peeled and diced small
1 onion, chopped
1/2 teaspoon minced garlic (optional)
1 pkg frozen vegetable soup mix
1 15 oz.can veg all
1 15 oz. can rotel tomatoes, diced
1 15 oz. can whole kernel corn
1 8 1/4 oz. can sliced carrots
1 8 1/4 oz. can green beans
1 small can spicey hot V-8 juice
salt and pepper
Brown hamburger…add onions, salt, pepper, garlic and potatoes, then dump all the other can veggies and frozen veggies in..cook for about an hour..
Serve with corn bread..Enjoy!!
