77-Layer Casserole

I like making this casserole because it is easy to make and is a huge crowd pleaser. This is one of those casseroles that need very little attention and taste fabulous. it is almost impossible to get Smalls to eat any corn; however he will shovel this in like he is starving to death. We just found out he is allergic to the casein in cow milk products. So I am going to have to use goat or soy cheese the next time I make it. I will update when I do and tell you how it went.


1 Cup uncooked rice

1 1 Lb can whole kernel corn, undrained

1 Teaspoon seasoned salt

1/4 Teaspoon seasoned pepper

1 beef bouillon cube

3/4 Cup boiling water

1 15 Oz. Can Hunt’s Tomato Sauce with Tomato Bits

1 Teaspoon Worcestershire sauce

1 Teaspoon Italian seasoning

1 Cup chopped onion

1/2 Cup chopped green bell pepper and celery

1 Pound lean ground beef

1 Cup shredded Cheddar cheese

2 Tablespoons bacon bits



In 2-quart casserole, arrange ingredients in layers in the following order:

Rice mixed will with corn

half the salt and pepper

bouillon cube

boiling water

Half of Hunt’s Tomato Sauce that has been mixed with Worcestershire sauce and Italian seasoning

Chopped onion

green bell pepper


Uncooked ground beef

remaining salt and pepper

Remaining Hunt’s Tomato Sauce mixture.

Cover tightly; bake at 375 degrees for 45 minutes. Sprinkle with cheese; bake, uncovered, 15 minutes longer. Top with bacon bits before serving.
