Apples are one of my favorite snacking fruits, so I’ve certainly been doing my share of that!  Anyway… I had a taste for a little sweet somethin’ somethin’ the other night, but didn’t really feel like putting in a lot of effort into it either. I knew I had a bowl of fresh apples, found some flour tortillas and remembered these apple enchiladas. And, woohoo, I also had a little bit of homemade vanilla ice cream leftover in the freezer. Perfect.

Ingredients: asfor

1 can pie filling (apple and strawberry are very good)

8 large flour tortillas

1 cup sugar

1 cup water

1 cup butter

Vanilla extract


Spray an 11×7 pan with Pam. Lay tortilla out and spoon about 1/4 cup of pie filling just below the middle. Roll up tortilla and cut in half. Lay into pan seam side down. Repeat with more tortillas.
In medium saucepan, boil water, butter, sugar, and a dash of vanilla extract. Once it has combined, remove from heat and pour over tortillas, covering thoroughly. Let the sauce soak in for about 20 minutes, and flip the tortillas over once to get both sides covered.
Bake at 350 for 40-45 minutes. Remove and sprinkle with cinnamon or powdered sugar. Serve warm. (This is GREAT with ice cream!)
