Crab-Stuffed Mushrooms

Two of my favorite things are right here in this dish; crab and mushroom. This is not quite a potluck dish; put it is fun for small parties. I have also made this with craw fish tails and once with some leftover boiled shrimp. I shelled and ground up the craw fish and shrimp in a blender, before using. I suppose you could use tuna, but i have never tried it.

  • 1 1/2 – 2 lbs. mushrooms
  • 1 chopped onion
  • 1/4 lb. butter
  • 1/4 – 1/2 cup Progresso Italian bread crumbs
  • 1 1/2 cups Parmegiana cheese
  • 1 (6 oz.) can crabmeat
  • Worcestershire sauce to taste (about 1 – 2 Tablespoons)
  • paprika
  • chopped parsley

Clean mushrooms, remove stems and insides and chop. Melt butter. Add chopped onion and chopped mushrooms and saute. Add bread crumbs, cheese, crabmeat and Worcestershire sauce. Put mixture in mushrooms. Sprinkle with paprika and parsley, if desired. Bake at 400 degrees for 20 minutes.
Note: If they appear too dry for your tastes, add a little extra butter or Worcestershire sauce.

    Another “gotta try this one”. I love stuffed mushrooms, used to make them all the time for dinner parties and such, but forgot about them, it’s the stuffed mushroom renaissance. 🙂 Harlon
