Homemade Pimento Cheese
Do you have any idea how many Vacation Bible Schools I have attended where at least on day the snacks were 1/4th of a pimento cheese sandwich and a cookie? The number is way up there. It always seemed like that was some unwritten Baptist rule. Must serve sweet tea and deviled eggs at potlucks; must serve watered down orange koolaid and pimento cheese sandwiches at VBS. Seriously though, my Memaw used to make us the best homemade pimento cheese(this is her recipe). She was a Methodist, but we have forgiven her for that. A little heads up on Memaw, If you have seen “Keeping up Appearances”, I am almost positive they based the Hyacinth character solely on Memaw. This recipe is great for sandwiches or as a dip. Back to the pimento cheese, it is so versatile it is used on sandwiches, as a dip, in deviled eggs, in pastry cups, on veggies, and I have even heard of pimento cheese chips.
Ingredients:
4 oz. (1/2 package) cream cheese, softened
1 cup grated sharp cheddar
1 cup grated Monterey Jack cheese
¼ cup mayonnaise
2½ tablespoons pimentos, chopped
¼ tsp. kosher salt
⅛ tsp. ground black pepper
⅛ tsp. garlic powder
1 tsp. Creole seasoning(optional)
1/2 tsp. Cajun seasoning (optional)
Directions:
The great this about this recipe is everything but pimentos, I keep in my kitchen year round.
In the bowl of a stand mixer(or by hand, electric mixer or food processor), beat the cream cheese until smooth.
Add the remaining ingredients and continue to mix on medium speed until well combined. Can be served as sandwich, in a bread bowl or with crackers.
